Ingredients

  • 1 cup oat flour
  • ¾ cup xylitol (or dry sweetener of choice such as brown or coconut sugar)
  • 1 scoop vanilla protein powder
  • 1 tbs ground flax
  • 1 tbs ground cinnamon
  • 2 tsp baking powder
  • 1 tsp sea salt
  • 3 large eggs
  • ½ cup pure canned pumpkin
  • 1 tbs coconut oil, melted (or butter)
  • 2 tsp vanilla extract
  • 1 tsp apple cider vinegar
  • FROSTING, optional
  • ½ cup whipped cream cheese (tbs per donut)
  • ½ tsp liquid stevia

Cooking Instructions

  1. Preheat oven to 350 degrees F
  2. Combine first 7 ingredients together in a bowl
  3. Combine the wet ingredients in a separate bowl. Whisk until all ingredients are mixed well
  4. Add your wet ingredients into your dry ingredients and mix
  5. Spray 8-10 donut molds with nonstick spray
  6. Evenly divide batter between each donut mold
  7. Bake for ~ 10 minutes or until a toothpick comes out clean
  8. While donuts are cooling, mix together cream cheese and stevia
  9. Frost donuts
  10. Sprinkle with addition cinnamon, if desired
  11. Enjoy with a cinnamon roll protein shake!
