Low-Fat, High-Protein Vegetarian BBQ Cobb Salad

  • 6 cups Shredded Lettuce
  • 1 cup Diced Orange Pepper
  • 4 large Egg Whites, chopped
  • ½ cup Tomato, chopped
  • 1 cup TVP (textured vegetable protein)
  • ⅔ cup Cooked Corn
  • ½ cup Low-Sodium Black Beans, drained and rinsed
  • ¼ cup barbecue sauce of choice

Cooking Instructions

  1. Cook TVP according to package directions.
  2. Mix TVP with BBQ sauce.
  3. Add lettuce and veggies to salad bowl.
  4. Top with TVP/BBQ.
  5. Top with salad dressing of choice or additional BBQ sauce.
  6. Serve with a side of Quest High Protein BBQ Chips for an extra dose of protein!
