Ingredients

  • ¼ cup (28g) Coconut Flour
  • 2 ½ scoops (84g) MusclePharm Snickerdoodle Protein Powder*
  • ¾ tsp. Baking Powder
  • ½ tsp. Sea Salt
  • ¼ cup (84g) Honey
  • 1 Large Egg
  • 1 tbsp. Coconut Oil, melted
  • 1 ½ tsp. Pure Vanilla Extract
  • 2 tsp. Cinnamon
  • 2 tbsp. xylitol, (optional)

Cooking Instructions

  1. Sift together coconut flour, protein powder, baking powder and salt
  2. Whisk together melted coconut oil, egg, vanilla and honey
  3. Combine wet and dry ingredients
  4. Mix until just incorporated
  5. Cover and place in the refrigerator for 20 minutes
  6. Preheat oven to 325 degrees F
  7. Line a baking sheet with parchment paper
  8. In a small bowl mix together cinnamon and xylitol, if desired
  9. Shape dough into balls (about 1.5 tbs size)
  10. Roll in cinnamon/xylitol mixture, if using
  11. Place cookies on baking sheet
  12. Flatten cookie into desired shape
  13. Bake for ~10 minutes
  14. Remove from oven and allow to cool

Notes:

*If you do not have snickerdoodle protein powder, you can sub with vanilla + 2 tsp ground cinnamon

Serving Suggestions

Makes 10 cookies, 1 cookie = 1 serving. Macros leave you plenty of room to enjoy 2 or 3!

Hi, can the coconut flour be substituted with something else, or perhaps, the coconut taste would not be too strong?

Hi, Coco. I don't believe the coconut flavor will be that strong. If you really want to swap it, you could use corn starch, arrowroot powder, almond flour or oat flour. Keep in mind you may have to alter the amount you use depending on which you swap.

This recipe was soooo goooddd!!! I omit the coconut oil add extra egg and added in dark chocolate chips. Was easy to follow and wanted something sweet and this helped.
