Ingredients

  • ½ cup almond milk (or milk of choice
  • ½ cup chocolate egg whites
  • ¼ unsweetened apple sauce
  • ½ cup + 1tbs nonfat greek yogurt
  • 1 cup oat flour
  • 2 scoops chocolate protein powder
  • 3 tbs unsweetened cocoa powder
  • 1 tsp baking soda
  • ½ tsp salt
  • Frosting:
  • ½ cup nonfat greek yogurt**
  • ¼ cup cherries
  • sweetener, as desired

Cooking Instructions

  1. Preheat oven to 350 degrees F
  2. Spray an 8x8 glass baking dish with non stick spray
  3. Mix together milk, eggwhites, apple sauce and greek yogurt
  4. In a second bowl, whisk together oar flour, protein powder, sweetener, baking soda and cocoa powder
  5. Add 1/3 of dry ingredients to your wet ingredients
  6. Mix
  7. Add next 1/3 of dry ingredients
  8. Mix
  9. Add remaining dry ingredients and mix until just combined
  10. Allow batter to sit for 5 minutes
  11. Pour batter into baking dish
  12. Bake for about 20-25 minutes or until a toothpick comes out clean
  13. While brownies are baking, add greek yogurt, cherries and sweetener to a food processor
  14. Mix until just combined

Notes:

*You can substitute the chocolate egg whites for plain, however the chocolate flavor will be a bit more mild

**Make sure you are using a thick greek yogurt, such as chobani, otherwise your ‘frosting’ will be runny. If your yogurt is thinner, you can fix this by adding in some vanilla protein powder (1tbs at a time) to reach your desired frosting like consistency and increase the protein content of the brownies.
