Ingredients
- 1/4c (26g) flax
- 1 tsp baking powder
- 1/2-1tsp ground cinnamon (I used 1 tsp)
- 2 tbs apple butter (plus more for top, optional)
- 1 tbs milk
- 1 large egg
- 1/4 tsp vanilla extract
- Sweetener, to taste (I used a few drops of cinnamon stevia)
- Microwave safe mug
- Non-stick spray
Cooking Instructions
- Spray your mug with non stick spray
- Combine your ingredients in a bowl.
- Pour batter into your mug.
- Microwave for 2.5-3 minutes or until just set.
- Allow to cool in mug before removing.
- Top with additional apple butter, if desired.
Note: Nutritional information excludes the topping.

How do you keep it from overflowing out of the mug? It boiled over when I microwaved it.
