Ingredients

  • 1/4c (26g) flax
  • 1 tsp baking powder
  • 1/2-1tsp ground cinnamon (I used 1 tsp)
  • 2 tbs apple butter (plus more for top, optional)
  • 1 tbs milk
  • 1 large egg
  • 1/4 tsp vanilla extract
  • Sweetener, to taste (I used a few drops of cinnamon stevia)
  • Microwave safe mug
  • Non-stick spray

Cooking Instructions

  1. Spray your mug with non stick spray
  2. Combine your ingredients in a bowl.
  3. Pour batter into your mug.
  4. Microwave for 2.5-3 minutes or until just set.
  5. Allow to cool in mug before removing.
  6. Top with additional apple butter, if desired.

Note: Nutritional information excludes the topping.

How do you keep it from overflowing out of the mug? It boiled over when I microwaved it.
