Protein Packed Sweet Potato Shepherds Pie
Nothing says comfort like Shepherd's Pie, and this savory recipe is a great way to get your dose of protein in without breaking your diet!

Ingredients

  • 2lbs lean ground beef*
  • 6oz no salt tomato paste
  • 1-12oz bag frozen veggies of choice
  • Garlic powder
  • Onion powder
  • Salt
  • Black pepper
  • 2½ cups mashed sweet potatoes**
  • Paprika

Cooking Instructions

  1. Preheat oven to 375 degrees
  2. Add ground beef to a non stick skillet
  3. Cook over medium heat
  4. Once cooked, add in tomato paste, frozen veggies and seasonings as desired
  5. Place mixture into a 9x13in oven safe dish
  6. Spread mashed sweet potatoes over top
  7. Sprinkle with paprika, if desired
  8. Bake for ~35-40 minutes
  9. Serve immediately

* Ground beef can be swapped for ground turkey breast, ground chicken breast or your favorite vegetarian/vegan protein source
** Frozen, all natural mashed sweet potatoes were used in this recipe. If buying frozen mashed potatoes, please check label as they could contain added salt and fat.

There's an error in the macros. If the entire thing is one serving, and it calls for 2lbs ground beef, you'd definitely have more than 53g protein.

The entire recipe makes 4 servings as stated at the bottom of the recipe, the listed macros are for 1 serving.
