Spicy Scrambled Eggs

Sick of boring scrambled eggs? Eggs are a cheap source of protein, but like any food, if you eat them too often they get boring. So spice up regular scrambled eggs by using this recipe!

Ingredients

  • 2 large whole eggs and 4 eggs whites
  • 1/4 of an onion, finely chopped
  • 1 whole red chilli (or chilli to taste), finely chopped
  • 1 clove garlic, finely chopped
  • 50g cottage cheese
  • Pinch of mixed herbs
  • 2 slices of whole brown bread

Cooking Instructions

Grab a small non-stick frying pan and spray a small amount of olive oil cooking spray to coat the pan. In a small mixing bowl add 2 whole eggs and 4 egg whites. Whisk until the egg yolks and whites mix. Add 1/4 of onion, 1 clove of garlic and 1 whole red chilli - all finely chopped. Now add 50g of cottage cheese and a pinch of mixed herbs. Whisk this mix fully.

With the frying pan at moderate heat, add the contents of the mixing bowl. Put your toast in the toaster now. Gently stir the contents to scramble the eggs. Once eggs are scrambled add them to toast on a large plate.

Serving Suggestions

I like to have the eggs scrambled on toast because its easy and only takes a few minutes. You could also use the mix to make an omelette. Serving on a bed of spinach leaves adds color, flavor and vitamins.

Go to your grocery store's produce section and look for whole garlic. Peel back the first couple of layers of skin and you'll see a few 'cloves' making up the whole. Kind of like the way you can split an orange.

Lets see,
1 gram protein = 4 cal
1 gram carb = 4 cal
1 gram fat = 9 cal (really need to avoid Fat.lol)
So:50 Protein: 50 grams = 200 cal
Carbohydrate: 34 grams = 136 cal
Fat: 19 grams = 171 cal
So 507 Cals
If you omited the 2 yolks u cud drop 120 cals from the total but cholesterol helps build cell walls.
6 eggs is a large b-fast, Cut all the ingredients in halve and it would be bout 254 Cals.
