    Not a great picture, but if you are someone that misses salty snacks/chips, etc. omg, you have to try this...i just did for the first time, and really, really liked it!

    Kale chips

    (all you do is rinse the kale...dry in lettuce spinner...break up into bite size pieces, brush with olive oil....I just sprayed with zero calorie Olivio Olive Oil (butter) spray, sprinkle with salt..cook in 350 degree oven for 10 minutes, and walllaaa! crispy just likes chips!!! I LOVED IT! (but watch them in the oven closely..they don't take long at all!)

    ohhhh, ok. I eat lunch out in my car too, during the week, even though there is a nice kitchen here at the office. If i don't leave the building, i will be interrupted constantly with "can you just do this real quick", etc.

    I LOVE SPRING! I stopped by a farmer's market today - just opened after being closed for winter. The pickings were slim - but I'm so excited for my dinner tonight!!! BOUGHT AT MARKET: fresh dill, baby spring potatoes, farm raised chicken breast, boston bibb lettuce, eggs (not for dinner). What's on the menu (dill is the star):

    chicken breast - marinated in non-fat plain greek yogurt, a bunch of dill, a bit of dijon mustard, some corriander, cumin, salt & pepper

    baby spring potatoes - tossed in an atomizer spray of olive oil, a ton of fresh dill, salt & pepper (no need for butter or butter substitutes - if memory serves these potatoes have the taste worked in )

    huge "house-style" salad with the bibb and all the fixings, plus my new favorite, no-oil dressing concoction (golden balsamic, dijon, agave, some spices and such)!

    Still have plenty of dill left over for some dilly salmon later this week and I'm defrosting a tuna steak to poach and make a dilly tuna salad for lunch.

    Oh yeah, and it was light out when I got home so happy!

    Microwave Scrambled Eggs

    Moist, fluffy, cheesy and quick.

    3 lg eggs
    3 heaping forkfulls of cottage cheese (your choice of fat content)
    3 minutes in the microwave (time may vary, this works on ones I have tried)

    I usually cover before cooking... keeps the microwave cleaner... 2 matching bowls, one upside down works well and allows room for the eggs to expand

    If you have extra water after cooking it is from the cheese... not uncooked egg. It will mix in or you can pour it off... use less cheese next time.
