budget pad thai
seriously, dirt easy. and it doesn't even need to be vegetarian. switch the tofu with chicken or shrimp an you're good.
ingerdients:
1 package firm tofu
I can mushrooms (I like straw mushrooms)
1 can water chestnuts
a bunch of bean sprouts
1 package of medium thick vermicelli
1 jar spicy peanut sacue
(if you cant find the sacue it's easy enough to make)
stage 1:
so boil the vermicelli, once cooked strain and rinse under cold water.
put the noodles back in the pot and add some oil to them, mix thoroughly
so that the noodles dont get starchy and stick together in the fridge
stage 2:
-heat up a large skillet to medium high, add your tofu (or meat), cut into fryable strips.
- add mushrooms and water chestnuts
-mix in the sacue and let it simmer for like 5 minutes
- add the bean sprouts towards the end (bcause they'll go mushy and lose their nice texture)
-once the stirfry looks (or tastes) ready, set aside
stage 3:
-using the same pan, add a portion of stirfry to a portion of cold noodles and fry together with more peanut sauce.
-once it's hot all the way through it should be ready to eat
the best part about this dish is that for about $7-8 worth of ingredients, you have supper for about 4 nights.
keep the noodles in the fridge, and put the stirfry in a pot and keep in the fridge.
just fry the two together when you're hungry and you have delicious chinese food for dirt cheap.
