BBQ Turkey Sandwich
Prep: 5 min, Cook: 5 min.
1 lb. cooked turkey breast, shredded
1 cup barbecue sauce
4 Kaiser rolls
1/2 cup dill relish
Combine turkey and barbecue sauce in a heavy nonstick skillet over medium high heat. Bring to a simmer, stirring frequently, and remove from heat. Divide turkey mixture between rolls. Top with a spoonful of relish and serve.

Italian Garden Pasta Salad
Prep: 10 min, Marinate: 30 min.
1/2 lb. mostaccioli or small tube pasta
1-1/4 tomatoes, peeled and chopped
3/4 zucchini, trimmed and thinly sliced
2 ounces black olives, pitted and sliced
3-1/2 Tbs. scallions, chopped
1/4 cup tarragon vinegar
2 Tbs. plus 2 tsp. olive oil
1-1/4 tsp. basil, or 2 Tbs. fresh, minced
1 tsp. salt (optional)
1/4 tsp. dry mustard
1/8 tsp. pepper
1 clove garlic, minced
Cook pasta in boiling salted water until al dente. Drain and transfer to a salad bowl. Add next 4 ingredients to pasta. Combine remaining ingredients in a jar with a tight-fitting lid. Shake vigorously. Pour dressing over salad and toss. Let sit 30 minutes for flavors to meld.

Easy Strawberry Tarts
Prep: 5 min, Marinate: 10 min.
2 cups strawberries, hulled, coarsely chopped
1/2 cup sugar
2 tsp. lemon juice
4 sponge cake shells
1 cup lowfat vanilla yogurt
Combine first 3 ingredients in a bowl. Set aside 10 minutes, stirring occasionally to dissolve sugar. Fill sponge cake shells with fruit. Top with a dollop of yogurt.
