Prep 15 min, Cook: 10 min.
For 4 Servings: * 1-3/4 cups beef stock * 1 cup couscous * 1 Tbs. olive oil * 1-1/4 lbs. boneless beef top sirloin steaks, cut across the grain into 1/4 inch slices * 1 medium red bell pepper, 1/4 inch thick strips * 1/2 cup sweet onion, chopped * 1/2 cup honey dijon barbecue sauce * 1 Tbs. fresh parsley, chopped Bring beef stock to a boil in a saucepan over high heat. Stir in couscous, cover pan and remove from heat. Heat oil in large nonstick skillet over medium high heat. Add beef, half at a time, and stir-fry 1- 2 minutes, or until no longer pink. Transfer to a bowl and set aside. In same skillet, stir-fry bell pepper and onion 2-3 minutes or until crisp- tender. Return beef to skillet and stir in barbecue sauce. Cook and stir 1-2 minutes or until heated through. Serve over couscous and sprinkle with parsley. Per serving: calories 521, fat 15.9g, 28% calories from fat, cholesterol 126mg, protein 50.8g, carbohydrates 40.6g, fiber 3.0g, sugar 6.4g, sodium 696mg, diet points 11.7.
