Now normally...because we are such healthy-driven people, we shouldn't indulge in lots of mashed potatoes. But as a side-dish once in awhile, to go with that nice heaping slice of meat on your plate, here is a bit healthier alternative that cuts down on the fat while still bursting with flavor.
Ingredients: 2 T butter or margarine 1/4 cup chopped scallions 2 cloves garlic, minced 2 pounds potatoes; peeled, cubed and cooked 1/2 cup sour cream 1/2 cup skim milk 1/4 cup Parmesan cheese In large saucepan, melt butter or margarine. Add scallions and garlic; cook until tender. Add hot cooked potatoes, sour cream, milk and cheese. Mash until smooth and well blended. Garnish with chopped chives if desired. Nutritional information per serving: Calories 184 Fat 4 g Protein 4.4 g Carb 32 g Fiber 3.3 g Sodium 450 mg |
