Chinese Apricot Chicken
Prep: 15 min, Cook: 10 min. 1-1/2 lbs. whole chicken, cut up into small pieces 1/3 cup rice wine vinegar 1/3 cup water 1/3 cup sugar 2 Tbs. soy sauce 1 Tbs. plus 1 tsp. dry sherry (optional) 2 Tbs. plus 2 tsp. ketchup 1 Tbs. plus 1 tsp. cornstarch (cornflour) 1 Tbs. plus 1 tsp. peanut oil 4 fresh ripe apricots, cut in half 2 green onions, cut into thin slivers Rinse chicken pieces. Combine next 7 ingredients; set aside. In a wok or large frying pan, heat oil and stir-fry chicken over high heat for 10 minutes, or until tender and golden brown. Add apricots; stir-fry 1 minute. Pour sauce mixture over chicken. Cook, stirring until thickened. Garnish with green onion slivers. Per serving: calories 541, fat 31.9g, 53% calories from fat, cholesterol 124mg, protein 30.9g, carbohydrates 33.2g, fiber 2.2g, sugar 26.5g, sodium 698mg, diet points 13.5.
