Default Meal In A Potatoe

Meal In A Potato

2 Large Baking Potatoes
1/3 cup skimmed milk
1/4 cup low cal margarine
1/2 cup shredded reduced-fat sharp cheddar cheese
1 Tbsp Chopped chives
Pinch salt
Pinch black pepper
1/2 cup canned black beans
1/2 cup fat-free cottage cheese

Preheat oven to 425 degreesF. Scrub potatoes, then poke a few holes in each with a fork. Place potatoes on the centre reack of the oven and be=ake for about one hour (they are done when you can easily pierce them with a fork). Cool 10 minutes, slit the potato tops and scoop out the insides into a medium bow, leaving the skins intact. Add milk, margarine, cheese and chives to the bowl, and mash with a fork. Season with salt and pepper if desired. Stuff each potato skin with filling, place on a nonstick baking sheet and return potatoes to the oven to heat 5-10 minutes.
Meanwhile, heat black beans in microwave. When potatoes are done, top each with a quarter cup beans and quarter cup of cottage cheese.

Makes two servings

Per serving: 508 calories, 25g protein, 64g carbohydrates, 17.5g fat 8g fibre

In America we call that a twice baked potato (minus the beans and cottage cheese)
I think someone is trying to find an excuse eat more cottage cheese and black beans
