I think everyone thats new to weight training does that, wants to get huge very quickly, I know I did
Once you've been in the game for a while and learn more about how your body works, how muscle building works etc you tend to change your routine and diet pretty quickly.
I've tried a 5x5 prorgram too, but like you, I only saw some mild strength gains and little (if not no) mass gains. I tend to build the most mass alternating between 6-8 reps and 8-12 reps. For example one week I up the weight and push for 6-8, next week i drop the weight a bit and aim for 10. I find that after the higher rep week Im feeling stronger for the heavy week.
